The Isle of Harris Distillery in Tarbert, in the Outer Hebrides, has been producing two things since 2015: The Hearach single malt whisky—and this gin, which has made the distillery world-famous. The gin’s signature botanical is sugar kelp —a brown seaweed harvested by a diver in the underwater forests off the island’s coast. Harvested by hand, not by machine, in quantities that do not harm the marine environment. This seaweed gives the gin its distinctive maritime character—salty, iodine-rich, deep—which sets it apart from every other gin in the world. 

The recipe consists of a total of nine botanicals: in addition to sugar kelp Juniper berries, Cilantro, angelica root, cassia bark and other select ingredients. The distinctive blue bottle won the Gold Award at the World Gin Awards.
